From his grandmother, he learned to respect fresh, authentic, ingredients and create the vibrant flavors that turned family dinners into celebrated events. Meanwhile, his restaurateur father - owner of Madeiras in Acapulco and Villa Fiore also in Acapulco - imparted lessons in service and restaurant management.

Sandoval, who was once a professional tennis player and had toured the world participating in prestigious matches, had such a passion for food that he decided to enroll in the Culinary Institute of America. Upon graduation, he gained the attention of New Yorkers with his contemporary French restaurants, Savann and Savann Est. Soon, though, he returned to his first love - the food of his childhood and in 1997 opened Maya, his flagship modern Mexican restaurant in New York.

During the past 18 years, Sandoval's career as a chef and restaurateur has evolved to include serving as a culinary consultant, television personality, cookbook author and brand ambassador. Richard Sandoval Restaurants (RSR) is now a leading international restaurant group with over 40 concepts spanning Arizona, California, Colorado, Florida, Nevada, New York, Virginia and Washington, D.C., as well as in Dubai, Hong Kong, Mexico, Tokyo, Qatar and Serbia. Restaurant Hospitality recently named Richard Sandoval Restaurants as one of the "25 Coolest Multi-concept Companies."

With the broad range of restaurants in his portfolio, Chef Sandoval combines authentic Latin ingredients with international flavors and inventive techniques to create new and unexpected concepts and cuisines such as modern and coastal Mexican, Latin-Asian, Peruvian and Pan-Latin.

Chef Sandoval has entered into creative partnerships over the years. In 2003, he opened Pampano in New York City with world-renowned opera star Plácido Domingo. In 2013 he partnered with Peruvian chef Jaime Pesaque of Mayta restaurant in Lima to open Raymi, also in New York City.

In Washington, D.C., Sandoval partnered with noted sushi chef Kaz Okochi to open Masa 14. Sandoval soon expanded in the D.C. market opening El Centro D. F., Zengo and El Centro D.F. Georgetown, as well as acting as a consultant to Ambar, the city's first Eastern European restaurant. In February of 2014, Sandoval opened a new DC location - his award-winning restaurant and nightlife concept, Toro Toro.

Most recently, Sandoval introduced Pan-Latin cuisine to Serbia with the opening of Toro Latin Gastrobar in Belgrade, which was named "Best Restaurant in Serbia" by Tripadvisor. Soon after, Sandoval partnered with the well-known Fairmont Scottsdale Princess to open Toro Latin Restaurant and Rum Bar. In June of 2015, Sandoval's popular pan-Latin steakhouse, Toro Toro was the newest addition to the private island of Marsa Malaz Kempinski at The Pearl-Qatar. In August of 2015, Sandoval partnered with the Fairmont Mayakoba in Riviera Maya to introduce three new concepts inside the resort. El Puerto, Brisas and La Laguna feature curated menus offering modern Mexican and Latin-Asian fusion cuisine.

Sandoval has developed menus for American Airlines First Class cabin, as well as many of the world's leading hotels. He is equally passionate about tequila and has curated one of the largest collections in North America and the Middle East and aspires to educate diners on their quality and diversity. A frequent participant at international food and wine festivals, Sandoval's recent television appearances include competing on the fifth season of Bravo's "Top Chef Masters."

When not cooking, Sandoval is passionate about training the chefs of the future. He supports their growth on the Board of Trustees at his alma ma­­ter, the Culinary Institute of America and has recently received an honorary doctorate from Johnson and Wales. For his work, he has been awarded Mexico's National Toque d'Oro 2003, Bon Appétit Restaurateur of the Year 2006 and Cordon d'Or Restaurateur of the Year 2012. In 2013, Market Watch named him "On Premise Player of the Year," and in 2015, he was awarded an honorary Doctor of Culinary Arts and Food Service Management from Johnson & Wales University in Denver, Colorado.

Our approach to dining is truly unique: Our favorites dishes represent the region we're traveling through. We call this 'speaking the language of your food.' From our unique, off-the-beaten-path restaurants we visit for each included dinner to the variety of hand-crafted dishes, it's truly an immersion into authentic Spanish cuisine paired with Spanish wine. Your Tour Captain is there to make sure your dining experience goes smoothly and will help you interpret any menu item. For the included dinners, your Tour Captain will select a variety of appetizers, featuring regional cuisine, and will select your wine for the evening ~ a variety of red and white wine from the region in which you're traveling ~ and yes, "the wine does flow." Day 3: May 7: Cordoba: Unhurried Beauty

Enjoy a hearty breakfast and we're off for a visit to Cordoba. We arrive Cordoba and enjoy a walk in the heart of the city.

This morning we are set to explore Cordoba with our Local Expert Guide. Enjoy a tour of the La Mezquita (Spanish for the word, mosque), and discover the building's 1200 year history. It has served as a meeting place for Christians, a Moorish mosque, and since the 1500s, a Roman Catholic cathedral.

Story Way® Dining: Flamenco Show & Dinner Tonight

You'll have a wonderful Spanish breakfast this morning and then meet our local guide, who will accompany us to relive the drama of Carmen as we explore this historical city. Seville's city tour embraces its ancient Roman history, conquest by the Moors and contribution to the discovery of the New World. Like all old cities built haphazardly over the centuries, walking around Seville is a dream, and most probably one of Europe's most beautiful places. Its alleys twist and turn, and sometimes the tiny courtyards feature an orange or a lime tree bursting with vivid color.

As we pick through the narrow lanes of the charming city, we'll view Columbus' tomb in the Cathedral, the world's largest Gothic edifice. Then we're on to the Alcázar, the longest inhabited royal palace in Europe and a marvel of Moorish-style architecture.The variety of small palaces that make it up is amazing. The stucco work and the Mudejar ceilings are simply beautiful. The tiles on the walls are some of the most beautiful tiles ever made in Spain or anywhere. The huge gardens are marvelous and a joy to discover.

Then on to its Giralda Bell Tower, which was once the minaret of a 12th-century mosque, with views of all of Seville.

Exclusive Flamenco Show & Dinner Included: We'll take in the passion and seduction of the art-form known as the Flamenco. A show is Included with our dinner. Flamenco is an art form that was born, and thrives, here in Spain. Spanish flamenco is the best because Spaniards start dancing when they can barely walk, and they dance everyday. The stomping of the feet, the twirling of the body, and the drama of the music are simply part of their culture.

Enjoy a day at leisure and then tonight a special finalé on the grounds of our estate.

The dinner we have designed for you tonight along with the music, will make for the perfect finale to your Italian vacation. It is a night of great cuisine and, of course, wine along with your new friends.

Extend your Story Adventure: After Spain, head to Italy's Amalfi Coast!

Owner Mark Story likes to describe this 3 day and night extension to the 'Enchanted Amalfi Coast' as an opportunity to "recover from the Treasures of Italy tour." Well, we're not sure how much actual recovery is needed from the epic journey, but the Amalfi Coast, just like the headline implies, is always a good idea.

The extension as a whole includes not just the Amalfi Coast, but also the Sorrento Peninsula (where we make our home for the 3 days and nights), and the UNESCO World Heritage Site of Pompeii — complete with skip-the-line admission and our Story Expert Italian Guide.

A special welcome dinner is included in Sorrento at one of Mark's favorites, and then two days of flex time to soak up the coast. Most Story guests opt for Day 2's special "Isle of Capri & Amalfi Coast Highway" optional excursion, and then use the 3rd day for a time to on the coast. More excursions are available, but Mark cautions guests to "not fill up every waking moment."
